Ascorbate oxidase (AAO; EC 1.10.3.3) is a copper-containing enzyme belonging to the "blue copper oxidase" family and is one of the terminal oxidases in plants. It helps plants adapt to external environmental conditions. Ascorbate oxidase (AAO) directly oxidizes AsA, and the enzyme activity can be calculated by measuring the oxidation of AsA.
