Chalcone isomerase (CHI, EC 5.5.1.6) is the first recognized enzyme related to the synthesis of flavonoid compounds and is one of the key enzymes in the flavonoid metabolic pathway. It is widely present in many plants and plays an important role in the plant's antibacterial mechanism, stress resistance, cell development and differentiation, pigment accumulation, and expression of exogenous genes. Chalcone isomerase (CHI) can convert chalcone into dihydroflavonols, and by detecting the initial degradation rate of chalcone, the enzyme activity of chalcone isomerase can be determined.
