Debranching enzyme (DBE) (EC 3.2.1.68) belongs to the family of starch hydrolases and specifically hydrolyzes the α-1,6-glycosidic bonds of branched starch to produce linear glucose chains, playing an important role in adjusting the chain length of branched starch molecules. The 3,5-dinitrosalicylic acid method is used to determine the reducing sugars produced by DBE-catalyzed branched starch, and the enzyme activity of DBE is obtained by measuring the change in the content of reducing sugars.
