DPPH (1,1-Diphenyl-2-picrylhydrazyl radical) is a stable free radical widely used to quantitatively determine the antioxidant capacity of biological samples and food. The method is based on the characteristic strong absorption of DPPH radicals with a single electron at 517nm, which gives their alcoholic solution a purple color. In the presence of a free radical scavenger, the absorption gradually disappears due to the pairing of the single electron, the lighter the color, the lower the A value, allowing for the quantitative analysis of the DPPH scavenging ability in the sample.
