Fructose is a common ketose and an isomer of glucose, abundantly present in the free state in fruit juices and honey. Fructose is converted into glucose under the action of specific enzymes, and glucose, under the action of an enzyme complex including hexokinase, increases the amount of NADPH. By detecting the increase at 340nm, the fructose content is calculated.
