Glutathione transferase (GST; EC 2.5.1.18) is a family of proteins with multiple physiological functions, clearing potentially toxic compounds, including those produced by oxidative stress, and is part of the cellular defense mechanism. GST catalyzes the combination of GSH with CDNB, and the combined product has an absorption peak wavelength of 340nm; by measuring the rate of increase in absorbance at 340nm, the GST activity can be calculated.
