Peroxidase (POD, EC 1.11.1.7) is widely present in animals, plants, microorganisms, and cultured cells. It is an important oxidoreductase whose activity is closely related to resistance. Under the catalysis of peroxidase, H2O2 oxidizes guaiacol to form a reddish-brown product that has maximum light absorption at 470nm. The peroxidase activity can be determined by measuring the change in absorbance at 470nm.
