Phytic acid (also known as inositol hexaphosphate) is the primary form of phosphorus storage in many plant tissues (especially bran and seeds). Its structure is an inositol derivative with all six hydroxyl groups phosphorylated. It plays an important role in the normal growth of seeds. Phytic acid has a strong chelating effect and recent studies have found that it acts as an antioxidant in preservation and antioxidation. Phytic acid can cause the purple-red color of the iron(III) chloride-salicylsulfonic acid colorimetric reagent to fade, and the degree of fading is directly proportional to the content of phytic acid.. By measuring the decrease in absorbance at 500 nm, the content of phytic acid in the sample can be determined.
