Pyruvate plays an important role in various biochemical pathways, can be converted into carbohydrates during gluconeogenesis, or converted into fatty acids through acetyl CoA. Lactate dehydrogenase (LDH) can convert pyruvate into lactate, simultaneously oxidizing NADH. The decrease of NADH at 340nm is used to calculate the content of pyruvate.
