Starch phosphorylase is one of the key enzymes in starch degradation in plant tissues, and its activity is determined using the inorganic phosphorus colorimetric method. Starch phosphorylase can catalyze the polymerization of glucose-1-phosphate into starch and release inorganic phosphorus. The amount of released inorganic phosphorus can indicate the level of enzyme activity.
