Sucrose (C12H22O11; FW: 342.3) is one of the most important sources for producing the universal energy molecule ATP. Sucrose, a disaccharide, can be broken down into glucose and fructose. This kit provides a specific method for sucrose detection. Sucrose is converted into glucose and fructose by sucrase, and glucose is specifically oxidized to produce a pink-red product that reacts with a color developer, with a maximum absorption peak at 520nm. By correcting the background value of free glucose, the sucrose content can be obtained, and other disaccharides such as maltose and lactose will not interfere with this assay.
