Superoxide anion radicals, as one of the free radicals produced in the metabolic process of organisms, can attack macromolecules, causing damage to cell structure and function, and are closely related to aging and diseases of the body. The study of scavenging superoxide anion radicals has received widespread attention. Exogenous systems produce oxygen radicals that react with reducing substances to form a purple-red compound with a characteristic absorption peak at 570nm. The scavenging ability of the sample for superoxide anions is negatively correlated with the absorbance value at 570nm.
